Ok, so before anyone gets excited, I am very insecure about my cooking abilities, BUT I have been cooking a lot since I quit my job and I am learning a lot about what ingredients produce certain results and discovering recipes I really like. So, tonight I combined two recipes I love (from Paleo Comfort Foods) with a new recipe from one of my favorite sources (Paleo Parents) and made this chicken dish. Since what I did was not one or the other or the other, I think that classifies this as being “MINE.” Hopefully you agree!
Ingredients
- 2-3 lbs. of chicken breasts or tenders
- 1 lrg. sweet onion, thinly sliced (at least 2 cups worth)
- 1 lemon, halved
- 6 cloves garlic, minced
- 1 tablespoon arrowroot powder
- Splash of water
- Rosemary, 2 sprigs chopped & fresh, OR approx. 1 tsp. dried and chopped (I used dried)
- 2 cups chicken stock
- Salt (we use kosher)
- Pepper (we use fresh ground pepper)
- 1/4 cup bacon fat/grease (yes, I said bacon grease! And yes, it is Paleo)
Instructions
- Heat the fat in a large skillet and while fat is heating, season each side of chicken with salt, pepper, and rosemary.
- Place chicken in skillet and brown on all sides.
- Remove chicken and set aside on a plate. Saute onion and add in garlic until tender.
- Add chicken stock, rosemary, and a squeeze of lemon from one half. Place chicken back in skiller and bring liquid to boil.
- Reduce heat and simmer covered for 30-35 minutes.
- Remove chicken and onion and set aside on a plate.
- Add a splash of water to the arrowroot powder, mix, and add to the stock left in the skillet. This will thicken the sauce and make it into a gravy. Whisk/mix together until smooth and bring to a boil. Simmer for 3-5 minutes stirring frequently.
- Once thickened, add chicken and onions back in. Serve extra gravy on top the chicken.
